Jalepeno Corn Chowder

Ingredients:
One small red onion - finely diced
Two Stalk of Celery - finely diced
Two Carrots - finely diced
1/2 LB Butter
Salt & Pepper to taste
1 Tablespoon Rubbed Sage
2 Cups White Wine..not cooking wine
2 Cans Chicken Stock
1 Qt Half & Half
1 Qt Heavy Cream
1 Qt Sour Cream (non-fat, if you can find it)
3 Large Potatoes
12 oz Pickled Jalepenos
1 LB Frozen Corn
Prep:
In a large stock pot, saute the celery, carrots & onion in the butter until almost dry. Add salt & pepper & sage. Add wine - reduce by half. Add stock, half & half , cream. SLOWLY bring to a boil. Add corn & potatoes and simmer until potatoes are tender. Chop jalepenos roughly and add with sour cream. Simmer for ten more minutes...then you're done!!! You can garnish with a little cheddar cheese.

Loaded Baked Potatoe Soup

Serves 4-6
Loaded Baked Potato Soup
Ingredients :
3 Tablespoons Bacon fat
1/2 cup scallions (some green tops) chopped fine
4 medium potatoes, peeled and diced
3 1/2 - 4 cups whole milk
1/2 cup evaporated milk (don't substitute)
1 lb. velveeta cheese cut up
salt and pepper to taste
1 - 2 cups cooked diced steak (optional)
1/2 cup sour cream (optional) at room temperature
Melt bacon fat in large heavy sauce pan.
Add potatoes, cover and cook over medium heat for about 5 minutes. Add onions (and steak if using), recover and cook until potatoes are nearly done. Add milk and evaporated milk. Cover and cook until hot, stirring occasionally.
Add 1/3 of cheese at a time, stirring until melted after each addition. Add salt and pepper. Cover and cook until heated through and bubbly. Remove from heat and add sour cream if using.

Quick & Simple Chili Bean Soup

Serves Approximately 8
Ingredients:
2lbs of extra lean hamburger (recommend 7%).
2 1lb cans of red chili beans
2 16oz cans of great northern beans
2 16oz cans of small red beans
2 16oz cans of stewed tomatoes
1 16oz can of tomato sauce (chunky garlic)
1 medium onion
1 medium bell pepper
1 (small) jar of ortega green chili salsa
chili powder
cumin
Italian parsley
Italian seasoning
salt free original blend Mrs. Dash
fresh minced garlic
Begin to prepare:
In a large skillet (recommend cast iron) brown until done 2lbs of extra lean hamburger (recommend 7%).
While the meat is cooking :
In a large Dutch oven or stewing pot mix in the following:
2 1lb cans of red chili beans (do not drain them)
2 16oz cans of great northern beans (drained)
2 16oz cans of small red beans (drained)
1 16oz can of tomato sauce (chunky garlic)
1 medium diced onion
1 medium diced green pepper (remove the seeds and stem & dispose)
2 16oz cans of stewed tomatoes (variety of your choice do not drain)
1 (small) jar of ortega green chili salsa (your choice of mild, medium or hot flavoring)
begin simmering the sauce on med. to low heat
Add in :
1 teaspoon of chili powder
1 teaspoon of cumin
1 teaspoon of Italian parsley
1/2 teaspoon of Italian seasoning
1 teaspoon of salt free original blend Mrs. Dash
1 teaspoon of fresh minced garlic
Add in:
Your cooked meat and continue to simmer for 1 hour or longer depending on you.
Serve hot either with garlic bread, cornbread or crackers.

Potato Soup Recipe

Ingredients :
2 cups cubed potatoes 1 stick margarine
1/2 onion chopped 1 can evaporated milk
1 can cream chicken soup 2 Tbsp. flour
salt & pepper to taste
Cook potatoes in about 2 1/2 - 3 cups water...Add 1 stick margarine. Mix flour and milk together in a cup...Mix slowly asnd stir as not to create lumps. Add to potato mixture, add crm chicken soup...add salt & pepper to taste...Cover turn on low heat and let it thicken.
This is delicious with mexican cornbread.
