Pickled Cucumbers

Serves: varies

2 med. size cucumbers
1 med. red onion
vinigar

Peal and slice fairly thin but not to thin the two cucumbers. Peal and slice the red onion make the slices on the onion thinner than the cucumber.

Place in a container ( recomend an old pickle jar so can be used over and over. Fill the jar with your cucumbers and onions and then add in 1/3 to 1/2 of the jar with the vinigar and the rest of the container with water.

Place in the refrigator to chill, before serving.



Finger Roll-Ups

Serves: Varies

One or Two packages of thinly sliced lunch meat
6 to 8 medium dill or sweet pickles (depending on your choice)
One or two kinds of block cheese (Cheddar sharp and Monterey Jack (recomended)
Toothpicks

Slice your pickles into 1/4 or 1/6 long cuts (your choice)
Slice your cheeses into about the same size
Place a slice of pickle, and one of each kind of cheese into a piece of the thin lunch meat and roll it up.
Can slice in half if you want or leave that size.
Place a tooth pick in to hold together.
Chill and serve.
For parties you can add an olive to the top of the toothpick for a more festive look.



HAM APPETILLAS

Ingredients:

2 pkgs. (8oz) cream cheese, softened
1/3 cup mayonnaise
2 tbs. chopped green onions
1/4 cup chopped black olives
8 (8 1/2-inch) flour tortillas
3 pkgs. (2 1/2oz) thinly sliced ham

Combine first four ingredients; spread evenly on tortillas. Arrange 4 ham slices over each tortilla; roll up tightly and wrap each individually in plastic wrap. Refrigerate at least 3 hours. Cut tortillas into 1/2 inch slices. Yield about 8 dozen.
