You need to raise chocobos to get some really good stuff, like the ulitmate summon, Knights of the Round. Heres a guide on how to get a gold chocobo.
PREPARATIONS:
You need the following.
1. At least 66 Sylkis Greens (buy them from the Chocobo Sage, their expensive)
2. Chocobo Lure Materia (prefferably mastered).
3. The highwind.
4. 6 Chocobo Stables at the Chocobo farm (talk to the guy in the house, there about 10,000 gil each).
5. 3 Carob Nuts (steal them from the red dragon you fight on the islands near bone Villiage.
6. 1 Zeo Nut, stolen from the Goblins on Goblin Island.
PROCEDURE
1. Go to the chocobo tracks near the gold saucer. Catch for Chocobos, and send them back to the Stables.
2. Go to the farm, and talk to Chocobo Billy (in the barn). Choose "Moving Chocobos", and see if you have a chocobo that gets a "good" rating (he'll be walking fast with his head up), put it in the stables.
3. Once you have a good chocobo, go to the tracks by Mideel and catch four Chocos.
4. Go to the farm and move a chocobo into the stables. Only move one if it's a "Great" Chocobo, and is the opposite sex of your other one.
5. If you have two of the opposite sex, on good and one great, then feed them each 11 sylkis greens.
6. Go to the Gold Saucer. At the Chocobo Square, Ester should be around. Talk to her, and she'll offer to let you ride.
7. Race all your Chocos up to class A or higher. It should be easy, since the Sylkis Greens raise your stats a lot. You also can get a lot of GP, or some okay Prizes.
8. Go back to the farm, talk to Billy, and choose Mating Chocobos. SAVE (important), and mate your two chocobos with a carob nut. You should get a blue or a green. Then release your first two, and feed the baby some Sylkis greens. If you didn't get a blue or green, then restart the game and try again.
9. Catch a good chocobo from the Gold Saucer and a Great Chocobo from Mideel. However, they should have the opposite sex of the first two you caught. I.E, if you got a male good and a female great, you should get a female good and a male great. Feed them Sylkis greens and race them to class A at the gold saucer.
10. Mate them with a carob nut (you should always save before mating). You should get a baby of the opposite color of the last time. I.E, if you got a green last time, you should get a blue, or vice versa.
11. Feed the two colored ones Sylkis Greens, and race them to class A or S. When there ready, mate them with a Carob nut. You should get a black. You can also release your two regular chocos.
12. Go to the tracks near the icicle area, and get four chocobos. Go back to the farm. If you have a "wonderful chocobo" (head down and sprinting), and it's the opposite sex of your black chocobo, keep it. Give any chocobo Sylkis greens that hasn't had some already, and race them. You should be able to get your black up to level S, the top level, where the prizes are really good. If you win ten races in a row, then you can get to S. Occasionally, as you've probably noticed, a guy wearing a sombrero riding a black chocobo will enter your race. The chocos name is Teo, and it's stats will always be better than yours, but it's actually easy to beat, if you practice a racing technique that lets you go faster for less stamina. There are many, so just develope one you like.
13. When your wonderful chocobo is at A or S, and your black is at S, save, and mate them with your Zeo nut. You should get a gold, but probably won't on the first try. Keep reseting and trying again. Eventually, you'll get the gold. It's darker than yellow, and has reddish legs. You can now go anywhere on the map, and get everything that insn't under water.
